Breakfast Burrito

This quick and easy recipe features lean venison mince, fluffy eggs, creamy avocado, and sharp cheddar, all wrapped in a warm tortilla. Ingredients

  • 5 x Eggs
  • 50g x Cheddar cheese, grated
  • 1 x Avocado, sliced or mashed
  • 250g x Lean & Wild venison mince
  • 1.5 tbsp x Cajun spice or a similar blend of your choosing
  • 4 x Tortilla wraps

Method

  1. Cook the Venison Mince: Heat a non-stick pan over medium-high heat. Add the venison mince and cook, breaking it up with a spoon, until browned and cooked through. Drain any excess fat.
  2. Season the Mince: Stir in the Berbere spice blend with the cooked venison mince. Cook for another 1-2 minutes, allowing the spices to become fragrant.
  3. Scramble the Eggs: In a separate bowl, whisk the eggs with a pinch of salt and pepper. Pour into a lightly oiled pan over medium heat and scramble until cooked to your desired consistency then add in the cheese.
  4. Assemble the Wraps: Warm the tortilla wraps according to package instructions (e.g., in a dry pan or microwave).
  5. Lay out each warm tortilla. Distribute the venison mince, scrambled eggs, and sliced/mashed avocado evenly among the four wraps.
  6. Fold and Serve: Fold in the sides of each tortilla, then roll it up tightly to form a wrap. Serve immediately and enjoy your protein-packed breakfast!
